A few months ago, I made a few videos with the help of my amazing friend Victor. We spent the day cooking in the kitchen and filming. As soon as we cooked a dish and finished filming it, we all stood around eating up the goodies. Seriously one of the best days.
This salad is a simple arugula salad that I dress with extra virgin olive oil, salt and pepper. I then add toasted pine nuts, and shave fresh parmigiano reggiano cheese on the lettuce with a potato peeler. To finish, I drizzle either balsamic vinegar or my homemade balsamic reduction on top!
Easy Balsamic Reduction
1 c. high quality balsamic vinegar
1/3 c. sugar
Boil for 4 minutes on medium high until the sugar is melted and combined into the balsamic vinegar. Store in an air-tight jar in your fridge.
